Easy Cookin!

I know some people love cooking and really enjoy coming up with elaborate, delicious things to cook! I really respect those people, however I am not one of them! I have pretty much decided I am content with only cooking easy things! This way I can't mess them up and it doesn't take me all day. I know some of my fellow newlyweds and friends feel the same as me so here ya go, the world's easiest recipies! Beware though, some aren't so low calorie.

Chicken & Cheese Enchiladas:

Ingredients:

4-5 chicken breasts

20 tortillas

3-4 bags of cheddar or monterey jack cheese

1-2 cans green chili enchilada sauce (I usually get 2 of each to be safe)

1-2 cans cream of chicken

Directions: (bake in a well greased, glass 9x13)

* Boil the chicken breasts until completely cooked

* In a separate bowl mix one can green chili enchilada sauce per 1 can of cream of chicken.

* In each tortilla place a little chicken, sauce mixture and cheese and roll up the tortilla and place in the pan.

* Before cooking take the remainder of the sauce mixture and cover the top of the enchiladas. ( I usually have to mix the second cans to have enough)

*Finish by covering the top of the enchiladas with cheese. Be generous with the cheese and sauce because it will keep them from being dry.

* Bake for 1 hour at 350 and they are DELICIOUS!!


Chicken Pot Pie:

Ingredients:

2 Pillsbury pie crusts

1 8oz bag frozen veggies

1 can cream of celery

1 can cream of potato

1/2 milk

Directions:

*Boil Chicken until completely cooked.

* Cut chicken into small pieces.

*Mix the frozen veggies with the cream of celery, cream of potato and 1/2 milk.

* Pour the mixture into a pie pan with the Pillsbury crust lining the pan.

*Take the second pie crust and cover the top of the pie.

*Bake at 375 for 1 hour. (be sure to cut a few slits in the top of the pie before baking.)


Southwest Chicken:

Ingredients:

3-4 Chicken breasts

1 bag cheddar cheese

1 can sour cream

2 avocados

1 can black beans

Directions:

*Season and bake 3-4 Chicken breasts.

*When you have about 15 minutes remaining pour one can of drained black beans and one bag of cheddar cheese over the chicken.

*Bake at 350 for 1 hour.

*Serve with avocados and sour cream

(hows that for EASY!)

Razzelberry Cobbler:(my grandma's recipe)

Ingredients:

1 Marie Calendar Razzleberry Pie

1c sugar

1 tsp vanilla

1 stick butter

Pillsbury pie crust

Directions: (bake in a greased, glass 9 x 13)

*crunch up the pie and the Pillsbury crust and mix together. (try not to crush the berries)

*mix 1 stick butter, 1 cup sugar, 1 cup water and 1 tsp vanilla in a bowl and cook in the microwave for 1 minute.

*Pour mixture over the cobbler

*Bake at 350 for 1 hour

Cherry Dump Cake:

Ingredients:


2 cans cherry pie filling

2 can crushed pineapples

brown sugar

1 yellow cake mix

Directions: (bake in a 9x13, glass pan)

* Line pan with brown sugar.

* pour cherry pie filling and pineapples over the sugar.

*pour the yellow cake mix over the fruit.

cut up one stick of butter and place evenly over the top of the cake.

*Bake at 350 for 1 hour.

Hey! I was so enjoying reading all your recipes and excited to see razzleberry on there. However, you need to edit that post. You have listed 1 cup of vanilla! Yikes. Hope no one has already made it:)

yay for EASY recipes :)

i hope those are vickster's delish enchiladas...i cant find the recipe i wrote down that one time...

annnd finally, there was a UT football player who had an online cooking shower his senior year and his FAV dessert was his "momma's cherry dump cake" EASIEST thing ever, and sooooooooo good :)
