Belton, Beach & 4th of July!

We have had a lot of fun things going on lately! We went to Belton to see Lance's family last Tue-Thurs and had a great time. We got to spend a lot of time with his parents and even got to see both sets of Lance's grandparents. Lance's parent took us out to a really cool restaurant and the rest of the time I pretty much pigged out on his Mom's WONDERFUL cooking! Everyone was also really excited b/c the Belton parade was in USA Today as one of the TOP 10 THINGS TO DO ON THE 4th! John & Ellen were in the parade and his grandparents were driving thier truck! We always have a great time in Belton and I am really glad we were able to go!

On Friday we went to Clearlake bright & early and spent the day at the beach with Jamie, Jay & Josiah (in utero of course)! Jamie was the sweetest little mommy to be. She even packed a special cooler of ice cold towels to put on her belly while she was in the sun. She didn't want her precious little baby to get over heated of course! :) They are already the cutest parents and I can't wait to meet little Jo. Our day was actually cut a little short by a HUGE storm that blew in and literally almost blew all of our stuff into the ocean. It took Lance & Jay almost an hours to get the surf boards and stuff loaded up on the top of the car! It was a really crazy storm! That night we went to see fireworks and ate mexican food! It was a really fun day.

The next morning Lance & I headed to Schlitterbahn! It was totally packed with people but we had a really fun time. However, I never knew water slides were so scary! I have never been daring at all when it comes to rides. However, it was just Lance and I so if I didn't go he had to wait in line all alone. So I was really daring and did the scary slides where you lay on your back and drop straight down. It was really one of the scariest things I have ever done b/c I am kinda afraid of heights. :) I got to the bottom of this one "slide of death" and Lance had already gone down. He was just standing on the side laughing. He knew right after he went down it that I was going to be terrified....and he was right! I still have a big knot on the back of my head from being jarred around the slide. But overall it was an awesome day and I can't wait to go back!

Fun at the Ballpark!

Saturday Me, Lance and the fam had a fun little outing to an Astros-Red Sox game. We had the most amazing seats (right behind home plate) and the Astros won 11-10 in a REALLY exciting ending! I also had some cotton candy, which really makes any baseball game more than worthwhile....sad I know! When we were leaving the game we saw Manny Ramirez on a golf cart going somewhere with some really cute Brazilian looking girl! :) That was cool too! (he plays left field for the Red Sox....I know some of my readers don't know that and I completely understand....I wouldn't have either...pre Lance!)

I hope everyone is having a good week! I am off work so mine has been GREAT so far! We are off to Belton tomorrow to visit Lance's family and then we are coming back here for some 4th of July fun with Jamie & Jay....and we are going to Schlitterbahn Galveston Saturday! It's looking like a great week to come!

Old Friends!

I should definitely be sleeping b/c I have work in just a few hours. But I got so sad tonight I couldn't sleep. I was on facebook and was looking through some pictures of some old friends and realized that I haven't seen a few of my best friends in a year! I mean that is a long time!!!! It kind of hit me that this is the time in life where everyone moves on and people are scattered all over the place. I have a certain friend in particular that I was as close as a sister to all though high school & I haven't seen her since my wedding! I have decided that as of tonight I am going to make a better effort to keep in touch with the people that I love. We should never get to busy or preoccupied to forget special relationships! Best Friends don't come along all the time, and I really think friends are a gift from God. So if you are reading this post and haven't seen one of your very best friends in a year go call them right now! You don't want to end up depressed like me, blogging about it at 1:00am! :) Here is a picture of some of the most important people in my life! These were the girls in my wedding and I love them so much!

Fun weekend ahead!


Not much to say, except that BETHO IS COMING TOMORROW! She is getting into town early tomorrow morning and we are going to do a lot of fun wedding stuff! Oh yeah, I forgot to mention that our long lost friend Brittney Lubojasky is back from Spain and coming with us for the fun. We haven't seen Brittney in almost a year and that is just unacceptable! Saturday is also going be a great day because Lance, Betho & I are going to spend the evening with Jamie & Jay. Betho hasn't gotten to see her cute & pregnant! It just feels like everything is normal and how it should be when Betho comes back in town! So, yes I am very excited about the weekend if you can't tell!

Easy Cookin!

I know some people love cooking and really enjoy coming up with elaborate, delicious things to cook! I really respect those people, however I am not one of them! I have pretty much decided I am content with only cooking easy things! This way I can't mess them up and it doesn't take me all day. I know some of my fellow newlyweds and friends feel the same as me so here ya go, the world's easiest recipies! Beware though, some aren't so low calorie.

Chicken & Cheese Enchiladas:

Ingredients:

4-5 chicken breasts

20 tortillas

3-4 bags of cheddar or monterey jack cheese

1-2 cans green chili enchilada sauce (I usually get 2 of each to be safe)

1-2 cans cream of chicken

Directions: (bake in a well greased, glass 9x13)

* Boil the chicken breasts until completely cooked

* In a separate bowl mix one can green chili enchilada sauce per 1 can of cream of chicken.

* In each tortilla place a little chicken, sauce mixture and cheese and roll up the tortilla and place in the pan.

* Before cooking take the remainder of the sauce mixture and cover the top of the enchiladas. ( I usually have to mix the second cans to have enough)

*Finish by covering the top of the enchiladas with cheese. Be generous with the cheese and sauce because it will keep them from being dry.

* Bake for 1 hour at 350 and they are DELICIOUS!!


Chicken Pot Pie:

Ingredients:

2 Pillsbury pie crusts

1 8oz bag frozen veggies

1 can cream of celery

1 can cream of potato

1/2 milk

Directions:

*Boil Chicken until completely cooked.

* Cut chicken into small pieces.

*Mix the frozen veggies with the cream of celery, cream of potato and 1/2 milk.

* Pour the mixture into a pie pan with the Pillsbury crust lining the pan.

*Take the second pie crust and cover the top of the pie.

*Bake at 375 for 1 hour. (be sure to cut a few slits in the top of the pie before baking.)


Southwest Chicken:

Ingredients:

3-4 Chicken breasts

1 bag cheddar cheese

1 can sour cream

2 avocados

1 can black beans

Directions:

*Season and bake 3-4 Chicken breasts.

*When you have about 15 minutes remaining pour one can of drained black beans and one bag of cheddar cheese over the chicken.

*Bake at 350 for 1 hour.

*Serve with avocados and sour cream

(hows that for EASY!)

Razzelberry Cobbler:(my grandma's recipe)

Ingredients:

1 Marie Calendar Razzleberry Pie

1c sugar

1 tsp vanilla

1 stick butter

Pillsbury pie crust

Directions: (bake in a greased, glass 9 x 13)

*crunch up the pie and the Pillsbury crust and mix together. (try not to crush the berries)

*mix 1 stick butter, 1 cup sugar, 1 cup water and 1 tsp vanilla in a bowl and cook in the microwave for 1 minute.

*Pour mixture over the cobbler

*Bake at 350 for 1 hour

Cherry Dump Cake:

Ingredients:


2 cans cherry pie filling

2 can crushed pineapples

brown sugar

1 yellow cake mix

Directions: (bake in a 9x13, glass pan)

* Line pan with brown sugar.

* pour cherry pie filling and pineapples over the sugar.

*pour the yellow cake mix over the fruit.

cut up one stick of butter and place evenly over the top of the cake.

*Bake at 350 for 1 hour.

1 Year!

Today Lance and I celebrated our 1 year anniversary! We were actually in Lubbock on the 9th getting an apartment, then we were in Abilene visiting family so we had our belated celebration tonight! We went to Cafe Red Onion, one of our fav Houston restaurants and had some delicious fried plantains, seafood enchiladas and Colombian Coffee filet mignon. Sounds weird but BELIEVE me it's delish! Here are a few pics from tonight after dinner.



In honor of our wonderful first year of marriage I decided to do a top ten list of our year! It has been a great year so this may be a little difficult but here we go! :) I am going to try to find a picture of each event but I am not at my computer so I may not find many.

10. Road trips! Lance and I have gone on about 10 road trips this year. We have gone to Belton, Abilene, Dallas, San Antonio, Lubbock, New Braunsfels, and probably a few more that I am not thinking of. We have gone on trips, visited family, and gone to LOTS of weddings! We love road trips and I think we will have many more great road trip memories to come!

9. Moving into our first apartment together! We (well maybe just me) had so much fun decorating and finally having a place we could call home together!

8. Getting my first "real" job. For those who don't know I taught Pre-K at Westbury Christian School and had an amazing experience! I fell in love with all of my kids and found a new found passion for 4 and 5 year olds!

7. Our 'Scrubs" summer marathon. Our first summer together before we started working we watched every season of Scrubs. We had NO responsibility that summer and watched Scrubs all the time. I have some great memories of us ordering Pizza and watching Scrubs for hours on end that summer!


6. Lance surprising me with my new car! Right after we got married I went out of town and Lance had to stay home and work. When I got home he told me that we were going to go car shopping the next day and I could pick out a Beetle! I had been dying to have one of those cars for years!




5. Mother/Daughter Cruise. My mom, Betho & I went on a cruise this May and had a week of fun laying out and going to Mexico! It was one of the best weeks of my life! :)

4. Camping. Camping is my very favorite thing to do! Lance proposed while we were camping in 2006 and Lance has been going camping with us for the past few years now. This year was our first trip as a married couple and it was so much fun having our own little tent and using all of our new camping gear!


3. Betho getting engaged! In May Betho & Cody got engaged and the whole family got to be a part of it. Lance, Cody and I were at a park and Betho just thought she as meeting us there to take pictures before we went to a Broadway show! Little did she know Cody was in town and there really was no show. He was just sitting on a bench at the park with a newspaper in front of his face and she had NO idea he was even there until he came out from behind the paper! It was a GREAT night!


2. Our Honeymoon!! We went to the worlds most amazing all inclusive resort for our honeymoon. It was heaven from the second we got there and we have been trying to plan a trip back ever since! I couldn't have imagined such an amazing place. We had so much fun and spent the week just soaking in the fact that we were actually married! :)

1. Our wedding! I know everyone has a great time at their wedding and I expected my wedding to be one of the best days of my life! However, I couldn't have never imagined having the wedding I had! It was literally the best day of my life! Everything went perfectly down to the last detail and we danced for hours and hours. So many of our friends and family were there and it was more fun than I could have ever imagined a wedding being!

I forgot to tell you that Lance and I found an apartment in Lubbock this week. It's GREAT, brand new, twice as big as our Houston apartment and the same price! We have two bathrooms now (praise the Lord), two bedrooms and even a little study! I love it! It was my first time to Lubbock and I was really impressed with how cute it was. There were lots of cute stores and yummy restaurants! However, it is weird and is going to take some getting used too! I have never experienced such weather. It was 60 degrees when we left to go apartment hunting and I was literally chewing on dirt all day. Yes, dirt was blowing into my mouth! I may have a new found appreciation for the Houston humidity by May 2010! :)
